The new Autumn/Winter 2025 menu at Cookies Cream

A new season glows at Cookies Cream. From October 1st, we launch Luminous Roots – a seven-course menu by Chef Nicholas Hahn that goes beneath the surface, into roots with depth, strength, and a light of their own.

There’s tang. Smoke. Silk. Crunch.
Fermentation adds its own quiet magic – depth, brightness, and a spark of the unexpected. Every dish harnesses the hidden powers of vegetables: flavours that fortify, textures that comfort, colours that shine even in the coldest months. Where last season’s Electric Bloom fizzed with summer energy, Luminous Roots burns lower and deeper, like embers under ash.

Radish opens the menu with sharp freshness, lifted by ponzu and the heat of horseradish. Chicory follows, wrapped in tarragon and beurre noisette—bitterness turned silky and rich. Roscoff onion and alpine cheese bring deep, smoky comfort, while enoki mushrooms meet truffle and walnut in a dark, earthy glow. Pumpkin, quince, and Jerusalem artichoke close the journey with a forest-bright finale: sweet, nutty, and warm all at once.

Sommelier Jan Wienecke and bar manager Sam Doyle mix it up this season with a rhythm that flows between wine and alcohol-free creations. Crisp Rieslings, bold Blaufränkisch, and housemade drinks from the Cookies Cream Bar – surprising, sustainable, and full of personality.
