September is a great month for wine.
It still calls for freshness, but autumn is close enough to bring in more texture and depth. The result: wines that feel balanced between light and comforting — perfect for long dinners and late summer evenings.
Whether you are planning a company dinner, client evening, brand event, press dinner, birthday, private celebration or Christmas party, Cookies Cream offers Michelin-starred vegetarian fine dining in one of Berlin’s most iconic hidden restaurants.
At Cookies Cream, this is where sommelier Hai Trinh comes in.
Hai’s approach is simple: wine should connect with the dish, the guest and the moment. The wine list is shaped by the whole team, working closely with Chef Patrick and Head of Bar Sam, to create pairings that either mirror flavours or create contrast.
Sometimes it’s harmony — like a floral Sauvignon Blanc alongside a radish dish with rose water. Sometimes it’s contrast — like a less-sweet wine with dessert to make things more interesting.
That’s the idea behind pairing here: not just wine next to food, but an extra layer of the experience.

What Makes A September Wine?
Hai looks for wines that balance freshness with texture.
They should feel bright but not sharp, creamy but not heavy — wines that “hug you” while still staying lively.
Hai’s Picks:
Weingut Rings Kalk & Stein Chardonnay
A personal favourite. Creamy, slightly smoky, with lemon and crisp acidity. Textured from time on the lees, but still clean and fresh — a perfect September wine.
Chenin Blanc from Domaine Guiberteau
Salty, structured and evolving in the glass. A versatile wine that works across multiple dishes, making it ideal for the layered flavours of vegetarian fine dining.
Le Trame by Podere Le Boncie
A Tuscan red from Giovanna Morganti’s small estate, known for its Sangiovese-based character, notes of cherry, earth, violets and pepper, and the kind of structure that brings a little autumn depth into the glass.

Why Try the Pairing?
Pairing isn’t about rules — it’s about noticing how a drink can change a dish. With the right wine, flavours shift, textures evolve and the whole experience becomes more complete.
That’s what drew Hai into wine in the first place — discovering how food and wine transform each other.

Wine Pairing at Cookies Cream
At Cookies Cream, pairing is part of the rhythm of the evening.
It can highlight flavours, add contrast or completely change how a dish is experienced.
For September, Hai’s selections strike the perfect balance: fresh, layered and just comforting enough to make you want to stay at the table a little longer.
