When the big pot is finally full and the whole kitchen smells of freshly fried Mandazi, everyone sits down to watch a film and snack on their Mandazi \u2013 a moment of pure joy that you can bring into your own Christmas bakery with this recipe:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mandazi from the Mbigili Children\u2019s Village<\/strong><strong><br><\/strong><em>Makes about 35\u201340 pieces<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 kg flour<\/li>\n\n\n\n<li>3 tbsp dry yeast<\/li>\n\n\n\n<li>1 tbsp baking powder<\/li>\n\n\n\n<li>Sugar and salt to taste<\/li>\n\n\n\n<li>6 tbsp oil<\/li>\n\n\n\n<li>1 tsp cardamom (optional)<\/li>\n\n\n\n<li>Approx. 2 cups milk or water (lukewarm)<\/li>\n\n\n\n<li>Oil for deep-frying<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Preparation<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove, drain on kitchen paper, allow to cool slightly \u2013 and enjoy while still warm.<br><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix flour, baking powder, dry yeast, sugar, salt and cardamom in a large bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gently warm the milk or water (not too hot, otherwise the yeast won\u2019t rise) and gradually add it to the flour mixture. Add the oil and knead everything into a smooth dough that no longer sticks to the sides of the bowl. Add a little more liquid if needed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Knead the dough vigorously for at least 10 minutes, then cover and leave it to rise in a warm place for about 1 hour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Roll out the dough to about 2 cm thickness and cut into diamonds (approx. 5 \u00d7 5 cm) \u2013 or cut out circles using a glass. Place the pieces on a baking tray and let them rest again for a short while.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the oil in a pot. Test with one Mandazi: if it rises to the surface and gently sizzles, the temperature is right.
